• 1 bunch fresh mint, chopped
  • 1/4 c. lemon juice, from about 1 lemon
  • 1/4 c. simple syrup, recipe follows
  • 1/8 tsp. amaretto
  • 2 c. watermelon balls, from about half a watermelon
  • 2 c. cantaloupe balls, from about 1 cantaloupe
  • Chili salt
  1. In a blender, combine mint, lemon juice, simple syrup, and amaretto.
  2. Blend until smooth.
  3. In a large bowl, combine the watermelon and the cantaloupe.'
  4. Add the vinaigrette and toss.
  5. Dip a martini glass rim in chili salt and serve mixture in it.  Garnish with a mint sprig.

Simple Syrup: Yield-1 cup

  • 1/2 c. water
  • 1 c. sugar
  1. In a saucepan, combine water and sugar over medium heat.
  2. Bring to a boil, then reduce heat and simmer for 5 minutes, until the sugar has dissolved.
  3. Take pan off heat and cool the syrup.
  4. Any extra cooled syrup can be saved in an airtight container in the refrigerator.
